    Crispy parmesan potatoes roasted in the oven are my new favorite side dish. The outside is a crispy and crusted in parmesan cheese crusted potato and the inside is soft and buttery and delicious. I was inspired by some Tiktok videos and decided to make my own oven roasted parmesan potatoes recipe.

    I included my garlic dipping sauce recipe with this parmesan potatoes recipe. These parmesan crusted potatoes and the garlic dipping sauce is a great flavor combination making this a delicious appetizer as well as a side dish. I used mini Yukon Gold baby potatoes to make these parmesan potatoes. These are about the size of a chicken nugget, so they are finger food friendly making this great for the holidays or even the big game.

    I’m not normally one for trending recipes. Usually I find they’re not all that great. I decided to do my own creative parmesan crusted potatoes. Crispy cheese androasted potatoes how can you go wrong? This melted butter, garlic powder, and fresh grated parmesan cheese mixture with herbs makes some delicious and crispy parmesan potatoes.

    Ingredients to Make Parmesan Potatoes

    I always try to make the recipes that I share use common household ingredients. In this recipe, we are basically just roasting potatoes and making a Parmesan mixture with salt, pepper, garlic powder, thyme, and smoked paprika and fresh grated parmesan cheese.

    The one thing I stress here is fresh, grated Parmesan cheese. The store-bought graded The one thing I stress here is fresh, grated Parmesan cheese. The store-bought grated stuff doesn’t melt as well because of ingredients they put in it.

    • Yukon Gold Mini Potatoes
    • Sea Salt
    • Black Pepper
    • Smoked Paprika
    • Garlic Powder
    • Onion Powder (Optional)
    • Thyme
    • Butter
    • Fresh Grated Parmesan Cheese (Don’t use store bought grated parmesan cheese)
    • Cooking Spray (Optional)

    How to Make Parmesan Potatoes

    Step 1 – Preheat the Oven to 425 Degrees Fahrenheit.

    Cut the baby potatoes in half lengthwise and score each potato with a crosshatch pattern like a tic tac toe board. Place the halved potatoes in a large bowl. In another bowl mix together all of the spices and parmesan cheese.

    Step 2 – Make the Parmesan Mixture by placing butter into a baking dish and then placing into preheated oven until butter is melted. Removed baking dish with melted butter from oven.

    Mix in the parmesan and spices mixture with the melted butter and stir until combined. Spread the parmesan mixture evenly in baking dish.

    Step 3 – Place Potatoes into Parmesan Mixture cut side down into the baking dish leaving a little bit of space between the potatoes. Brush the tops of the potatoes with the reserved Tablespoon of melted butter. A drizzle of olive oil can also be used.

    Step 4 – Cooking Oven Roasted Parmesan Potatoes – Place the baking dish with parmesan potatoes in the oven on the center rack. Bake potatoes 35 to 45 minutes until crispy parmesan potatoes are golden brown.

    Step 5 – Remove the oven roasted parmesan potatoes and let sit for a few minutes to let the parmesan mixture harden up a bit. Remove potatoes carefully with a spatula. Be a little bit gentle to not scrape off the cheesy crust.

    TIP: I find you end up with more crispy parmesan cheese mixture intact if you let the potatoes sit for a few minutes.

    Tips for Crispy Parmesan Roasted Potatoes

    1. Use potatoes that are uniform in size. This will ensure an even cooking time and you will end up with consistant crispy parmesan potatoes.
    2. Be sure to score the potatoes. Do not skip this step. This technique enables the potatoes to absorb all the flavor of the butter, spices and parmesan cheese mixture.
    3. Use the best quality ingredients for the best results. Do not use store bought grated parmesan cheese to make this. Use fresh grated parmesan. Danish or Irish Kerrygold butter. Do not use margarine.
    4. Don’t crowd the baking dish. Place potatoes in an even layer. Do not pile on top of each other. Maximum contact to the baking dish will ensure better crispy parmesan potatoes.
    5. Serve Immediately while crispy. Just like any potato recipe serve it right away to enjoy the crispy yummy texture. As potatoes sit the crispiness diminishes.

    Popular Substitutions and Variations

    • Use the leftovers for another dish. It turns out that these parmesan potatoes make an excellent addition to a breakfast of eggs and bacon or even used in a breakfast skillet with sautéed peppers, onions and eggs. Top with chopped tomato and chopped cilantro and parsley for that extra pop.
    • Change up the type of cheese. Substitute the parmesan cheese for grated cheddar cheese or grated Asiago cheese. Mix together your favorite cheeses to create something new.
    • Fresh herbs make a difference. Use some chopped cilantro, parsley or fresh chopped chives for an added delicious variation to sprinkle on top.
    • Make the roasted potatoes spicy. Add some red pepper flakes or cayenne pepper to the spice mixture for a spicy kick.

    Storing and Reheating Roasted Parmesan Potatoes

    Roasted potatoes can be stored in an airtight container in the refrigerator for 3 to 5 days.

    1. Preheat oven to 350 degrees Fahrenheit.
    2. Place potatoes on a baking sheet or in a baking dish
    3. Reheat the oven roasted potatoes for 10 minutes

    1. Preheat air fryer to 375 degrees Fahrenheit
    2. Place roasted potatoes in the air fryer basket

    Parmesan potatoes have about 180 calories per serving.

    Why are my potatoes not crispy in the oven?

    The most common reason for potatoes, not becoming crispy in the oven is overcrowding. Make sure the potatoes have a little bit of space in between and are in a single layer and not overlapping.

    Can I freeze roasted potatoes?

    It is not recommended to freeze roasted potatoes. Reason being is they will become soggy when thawed.

    Do the potatoes have to be scored?

    It is not required to score of the potatoes. Although it is highly recommended because it helps crispiness and lets butter, herbs and spices get deep into the potatoes.

    Ingredients

    • 1 1/2 Pounds Mini Yukon Gold Potatoes Halved
    • 6 Tbsp. Unsalted Butter
    • 1/2 tsp. Sea Salt
    • 1/4 tsp. Black Pepper
    • 1/2 tsp. Garlic Powder
    • 1/2 tsp. Smoked Paprika
    • 1/2 tsp. Thyme
    • 6 Tbsp. Grated Parmesan Cheese

    • 1/4 Cup Mayonnaise
    • 1 Tablespoons Garlic Powder
    • 1/4 tsp. Sea Salt
    • 1/4 tsp. Black Pepper
    • 1 Tbsp. Half and Half or Milk

    Instructions

    Parmesan Potatoes Directions

    • Preheat oven to 425°F.
    • Place butter in baking dish and place in preheated oven until butter is melted.
    • Remove baking pan from oven and reserve 1 tablespoon of melted butter for brushing tops of potatoes.
    • Mix all spices and Parmesan cheese with melted, butter, spices until well combined.
    • Spread fairly evenly on bottom of baking pan.
    • Place potatoes, cut down on top of mixture.
    • Roast potatoes in oven 35 to 45 minutes until crispy.
    • remove from oven. Let’s sit a few minutes and remove potatoes from pan with spatula.

    Garlic Dipping Sauce Directions

    • Place mayonnaise and spices in a bowl and mix well.
    • Add half and half or milk. Mix well.
    • Salt and pepper to taste.
